Chocolate Mousse

Oh this Monday.  I feel like there is nothing in the world that is going to get me over this day other than a vat of chocolate and a gallon of wine.

I feel comfortable telling you this since I know you are also the kind of person that drowns their feelings in chocolate and alcohol.  If you weren’t that sort of person, you wouldn’t be here.  And I have something for you today that is really going to hit the spot.  I am talking eat the whole batch.  Lick the bowl.  Stare at your husband’s leftovers and judge whether he’s done eating or just taking a tv time out.

IMG_3397Distract him with one waving hand while you swap bowls with the other.

Tell him there are no left overs and hide the remaining goods in fridge under the kale. (No man’s land.)

IMG_3394Eat so much you know you might barf but it’s totally worth it because sweet Lord Almighty this shit is good.

Chocolate Mousse

In a kitchen aid stand mixer, beat heavy cream and vanilla with a whisk until stiff peaks form; chill. Clean your stand bowl, and beat egg whites  until peaks form. While whisking add sugar until well incorporated.  Melt the chocolate over a double boiler, and remove from the heat  to cool. Add melted chocolate to egg whites, and fold until almost incorporated; add whipped cream and fold until completely incorporated. Plate and chill. Top with raspberries to serve.
