We talk a lot about how you’re tired and old and don’t have time to mess around with complicated things for dinner.
Oh, that’s probably just me we talk about. You’re beautiful. Not a wrinkle on your face, I swear. But me, I am tired and I have more grey hairs than a polar bear in it’s 80s.
(Which, if you ever point out to me in public, I will slit your wrists over.)
So today I propose a very low key main dish which you should have everything already in your pantry to make. I promise. Low ingredient, low effort, happy faces. As women, it’s all we can ask for at the end of the day.
Honey Mustard Chicken

Ingredients:
- chicken breasts - 2
- honey - 1/4 cup
- dijon mustard - 1/2 cup
- parsley - 1/4 cup, chopped
- salt and pepper - 1/2 teaspoon each
- corn flakes - 1 cup, crushed
- garlic - 2 cloves, diced
Instructions:
Season the chicken with salt and pepper. In a shallow dish, combine the honey, dijon, parsley and garlic until well mixed. Coat the chicken in the mixture. Then dredge into the crushed corn flakes (or bread crumbs as a substitute. ) Place in a greased baking pan and bake at 400 for 25 minutes.
Love,
Whit
