Shaved Brussels Sprouts Salad

Those scones from yesterday got you feeling a little thick?  Yea, me too. I always feel like I need a re-start button on Monday.

The fact of the matter is, when I am at work, I keep a tight schedule of what I eat.  It’s all green juice this and almonds that.  You probably wouldn’t even know who I am.  During the week, it’s so much easier to keep yourself on a good schedule than the weekends.  I pretty much have 2 different lives.

Weekend Whitney is all CHEESE CARBS MEAT NOM. Then Work-Week Whitney is all Green Clean Balance Boo-Hiss.


I told you, who am I?  But the truth is, we all do it.  We all have splurge days and days where a salad actually sounds good.  Weird, right?  And today, I have the perfect re-start your monday salad. It’s chock full of great things, from blood orange to pistachios and shaved brussels sprouts and a light and refreshing champagne vinaigrette that will knock your socks off.  And if you want this be vegan, just hold the parmesan.

Shaved Brussels Sprouts Salad with Champagne Vinaigrette



Toss the shaved brussels sprouts, radicchio, butter lettuce, pistachios, parmesan, and supremed blood oranges all together.  To make the dressing, combine the dijon, olive oil, lemon juice, shallot, garlic, salt and pepper in a mason jar and shake well until combined.  Add the champagne and whisk until well combined.
