Hey it’s Sunday. Right now we are up in the mountains with friends enjoying our lives, snuggling by a fire place, you know, doing February type things. And even though we’re in the mountains, when our friends travel in from out of town, they expect a Whitney meal. This is no joke, you should hear the guys. “This is the only home cooked meal I get all year, please God Whitney cook.”
When you call me God, what else am I supposed to do? But in all seriousness, there are times when you’re road tripping and want to be able to cook but it feels inconvenient to pack everything in the world you own just to go a few hours away. Cue the crock pot pulled pork sandwich. Minimal ingredients, 1 tool to cook it in, a few hours of un-monitered time, and you’ve got yourself a tasty sammie.
Aside from being a great travel meal, it’s also a great weeknight option for you busy people with jobs and kids and pets and responsibility. (Ugh, being grown up is so tiring. ) Slam it in the crock pot, leave it, come back and dinner is ready. Genius.
- pork shoulder - 3 pounds
- salt - 1 teaspoon
- pepper - 1 teaspoon
- vegetable oil - 2 tablespoons
- onion - 1, diced
- garlic - 2 cloves, minced
- ketchup - 1 cup
- tomato paste - 1 cup
- beef broth - 1 cup
- brown sugar - 1/2 cup
- apple cider vinegar - 2 tablespoons
- dijon mustard - 2 tablespoons
- buns - for serving
