Pasta with Bacon, Brussels, and Parmesan

Sunday Supper, sometimes you sneak up on me.  You’re tricky like that.  You see, I get all distracted by your friends ‘errands’ and ‘sleep’ that sometimes you show up on my doorstep practically unannounced.

A) That’s rude.

B) How is it already time for you to be here?

Well anyway, even though you are rude to just show up at my door like you own the place, I’ll still entertain you, sincewe all have to eat anyway.

But seriously, it’s called a heads up. Calendar reminder or something.  I dunno, just try and alert me before it’s scramble time. Jeez.

IMG_2991It’s times like these when you should all be concerned: speaking to a 2 hour window of time as if it’s a person should be your first clue.  But at least I’ve got it together enough to make dinner.  Sometimes that is all we can hope for, am I right?

Pasta with Bacon, Brussels, and Parmesan

Pasta with Bacon, Brussels, and Parmesan

Ingredients:

Instructions:

Bring a heavily salted pot of water to boil.  Cook the pasta per the box instructions. In a medium sized skillet, cook the bacon over medium heat until crispy.  Remove and drain on a paper towel.  In the remaining bacon fat, cook the brussels sprouts until just wilted, about 2-4 minutes.  Season well with salt and pepper.  Strain the pasta, reserving 1 cup of the cooking water for later.  Add the pasta to the bacon fat and brussels.  Toss together and add the butter and 1/2 cup of the cooking water.  Finish by adding the parmesan and tossing.  If it still doesn't look well sauced, you can add more of the pasta water and 2 more tablespoons of butter if needed.
