Lamb Sliders

Happy New Years!  I can’t even tell you how incredibly overwhelmed I am that this year is coming to a close.  It’s been a wild ride, and I’ve been trying to come to terms with what a million means.

It’s so ridiculous to know that ONE MILLION people stopped by our corner of the blogosphere this year. I say a million when I want to avoid counting, it’s not an actual number that people reach, is it?

Evidently, it sure is. Thank you. Thank you, thank you, thank you.  There are one million silly people in the world who don’t care about grammar and like butter.  I feel strongly in knowing this, that the world is a safer place.

And to celebrate all million of you, I made lamb sliders.  I don’t really know any other way to celebrate, than tiny lamb burgers.  Do you?

Lamb Sliders



To make the sliders, heat the olive oil in a skillet over medium heat.  Cook the onion and garlic until fragrant, about 4 minutes.  Add the coriander and rosemary; cook for 1 minute. Remove from the heat to cool. Add the sausage, ground lamb, breadcrumbs, goat cheese, eggs and 1/2 teaspoon salt to the bowl with the onion mixture and mix with your hands until just combined. Roll into 24 small balls and flatten into patties. To make the sauce, heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the onion and cook until soft, about 1 minute. Add the tomatoes, red pepper flakes, salt and sugar, and cook about 10 minutes. Add the oregano. Place the sliders in the sauce. Reduce the heat to low, cover and simmer until cooked through, about 10 minutes. Beat the goat cheese, crème fraiche and herbs in a bowl until smooth. Spread the goat cheese mixture on each roll, add a slider and a tablespoon of sauce, and a pickle.
