Bagel Bites

You pretty much don’t ever want to cook again after Thanksgiving, right? I can see the dirty kitchen fear in your eyes. You’re all “But I JUST got this house back in order.”  Well let me tell you a scary sad truth.  My kitchen looks like Thanksgiving happens every day.  Do you feel bad for me?

Well you shouldn’t and I don’t feel bad for you either.  I’ll tell you why.  Because tonight, you’re making bagel bites.  I KNOW.  I KNOW.  How did she take this awful monday and make it the best day of my life? Two little words kids.  They take you straight back to a carefree time I like to call ‘college.’

Because somedays you pass the frozen aisle in the grocery store, and you think about it.  You don’t do it because you’re an adult and the shame of getting something out of the freezer aisle that isn’t ice cream just cripples you.  That’s only me? okay.  Well, for whatever reason you have, you skip it, cause you’re all “nahhhhhhh…”

But today, you’re tired, you need something to ease you back into normal life and that is why I am here.  To give you permission to eat bagel bites.

Bagel Bites

Just promise me you'll never grow up.



Preheat the oven to 350 degrees.  Half your bagels and place on a baking sheet.  In 1 tablespoon of olive oil, cook the garlic and onion until translucent, about 3 minutes.  Add the tomato sauce and cook for 5 minutes.  Add the oregano, salt and pepper, and cayenne.  Cook for 5 minutes more, until the flavors come together. Place 2 tablespoons of sauce on top of the halved bagel, and spread to cover.  Top with the mozzarella (up to you on how much cheese you use, I used about 2-3 tablespoons of cheese per bagel bite. Bake for 15 minutes or until cheese is melted and starting to brown. Love your life.
