Maple Glazed Pumpkin Donuts

Do I have a surprise for you. Scratch that, two surprises. I know, right?

I love you, too.  Yes, thanks for noticing, I am having a great hair day. Mutually beneficial, this relationship of ours.

So Smart Balance called, and they want to give you a weekend getaway for two to Canyon Ranch, as in: 

  • Round-trip airfare for 2 to Miami International Airport from anywhere within the U.S.

  • Two nights in a one-bedroom suite at Canyon Ranch Hotel & Spa Miami Beach

You AND Me both. Here’s how this is going to work.

On October 1st, you’re going to “like” this recipe on Smart Balance’s facebook page.  We have a month to accumulate votes.  If at the end of the month, Amuse Bouche has the most votes, Brian and I will be headed to Florida for a weekend, and so will one of you!  If  we win, I’ll pull a random name from those who have “liked” our recipe, and they’ll be receiving a very nice trip for two.

And there are only 20 recipes in the contest.  So what I’m sayin’ is: There’s a chance. A good one, that you’ll be tannin’ it up on the American Playa. That’s beach for you non-spanish speakers, not slang for player.

All you have to do, is “Like” this recipe, sometime between October 1 and November 2.

And I have taken the liberty of making sure you’ll have no problem liking this recipe, because (surprise numero two) it’s pumpkin donuts with a maple glaze and bacon on top.

And if the bacon freaks you out, just dip them in cinnamon sugar instead. WIN for everyone!

Maple Glazed Pumpkin Donuts Topped with Bacon

     

Ingredients:

Instructions:

Preheat the oven to 350F. Prepare a doughnut pan by spraying with Smart Balance Omega non-stick cooking spray. Sift together the flour, baking powder, salt, baking soda, nutmeg, cinnamon and ginger and set aside. In your kitchenaid, cream together the brown sugar, Smart Balance Buttery Sticks made with Extra Virgin Olive Oil, and pumpkin. Add in the eggs and mix until combined, then add the milk and vanilla. Add the dry ingredients and mix until just combined. Transfer the dough to a piping bag, or if you don't have one, in a large ziplock bag. Cut off the corner and pipe into the donut pan. Bake until a toothpick inserted in the center comes out clean, about 7 minutes.  Remove and allow to cool completely on a wire rack. In a skillet over medium high heat, sear your bacon until well done, and drain on a paper towel. Set aside. To make the glaze,  whisk together the powdered sugar, maple syrup and milk. Dip cooled donuts in the glaze. At this point, you can either dip the glazed donut in a cinnamon sugar mixture (1 tablespoon cinnamon for every 1/2 cup sugar) or you can top with your cooked bacon.  Place dipped and topped donuts on a wire rack until set.
