Blueberry Lemon Loaf

Summer. It’s around the corner.  I can practically smell it in the air.  You know, the days you walk outside in the morning and the faint smell of sweat hits you, from all the fraggles taking their morning runs before work.

Bravo fraggles! I am going to go ahead and not join you on that.  You have fun!  But thanks for alerting me of the upcoming seasonal shift.  I do appreciate it.  One cannot rely on the weather channel alone, I take my cues from all of you tiny tots.

Instead of that vigorous sweating you are choosing, I plan on spending my time in the kitchen making blueberry lemon loafs.  They are perfect for all occasions.  Mother’s Day is coming up, why don’t you make your mom a loaf?

I also recommend making these for someone who just went on one of those vigorous running extravaganzas.  It smells healthy.

Blueberry Lemon Loaf

Ingredients:

Instructions:

Heat the oven to 350 degrees. Grease and a loaf pan. Line the bottom with parchment paper. Cream the butter and 1 cup of the sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. Add the eggs and zest. In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine 1/4 cup of the lemon juice, the whole milk, and vanilla. Add the flour and milk mixtures alternately to the batter, beginning and ending with the flour. Pour into pan and bake for 1 hour. While the cakes bake, cook the remaining 1/2 cup of granulated sugar with the remaining 1/2 cup lemon juice in a small saucepan over low heat until the sugar dissolves. When the cake is done, let it cool for 10 minutes. Take it out of the pan and place it on a baking rack set over a tray. Pour  the lemon syrup over the cake and let cool completely. To glaze, combine the confectioners’ sugar and lemon juice in a bowl and whisk until smooth.. Pour over the top of the cake.
