BBQ Chicken Eggs Benedict

People ask me all the time “What is the best thing you’ve ever made?”  You all do realize that is like asking target which of their summer dresses is the most precious.  Futile.

The truth is, I hardly make anything twice.  While this is fun and necessary for the upkeep of the blog, it makes it almost impossible to answer that question.  I hardly remember half the things I make.  Do you remember what you wore to work last week? Yea. Me either.  Just like I don’t remember what I ate.

BUT, that all changed recently.  We were at my favorite BBQ place in Denver (Russell’s Smokehouse, for you locals) when a miracle happened.  My husband, Lord love him, stated that he thought my BBQ chicken was leagues better than theirs.

I am sorry, but excuse me?  The man I love just told me that my BBQ sauce is better than Frank Bonanno’s. You can imagine the surge in my heart. I told him, “Just for that, I will make that bird for you every week! WHO ARE YOU? Trying to inflate my ego more than imaginable.  Telling me my sauce is better than Frank Bonanno. I love you. Remarry Me.”  I shit you not, I almost cried.

And what did I do but buy a whole bird and make him my BBQ chicken the next night.  And the real miracle happened the next morning.  I know, you’re saying “Whit, how can this get any better, you’ve MADE it!”  But, it did.

Because the next morning I took that left over BBQ chicken, and I made bbq chicken eggs benedict with it.  And then, I really did cry at the table.  Because I can safely say THIS, is the greatest thing I have ever made.  I can answer your question now without a doubt in my mind.

BBQ Chicken Eggs Benedict is the best thing I have ever made. It is my legacy.  One day my sons will tell their wives it’s not as good as ‘mom’s’.  I have officially made it.

BBQ Chicken Eggs Benedict

Ingredients:

Instructions:

Toast your english muffins until slightly browned.  Reheat leftover BBQ chicken and toss with 1/4 cup of the extra BBQ sauce.  Bring a large pot of water to boil and add the cider vinegar.  Crack each egg individually into a bowl.  Slip the eggs into the water and very gently stir to have the egg whites maintain their shape.  Turn off the heat and place a lid on the pot, and time for 4 minutes.  Gently remove from the water with a slotted spoon. Place the remaining BBQ sauce on the toasted english muffins.  Put a heap of the left over BBQ (I like to shred mine) on the english muffin.  Top with the poached egg and hollandaise. For the hollandaise: Fill a large saucepan 1/3 of the way to the top t and bring to a simmer.   Place egg yolks and 1 teaspoon water in a large mixing bowl and whisk until mixture lightens in color, about 2 minutes. Add the sugar and whisk to combine. Place the yolk mixture over the simmering water and whisk constantly for 3 to 5 minutes, or until the mixture coats the back of a spoon. Remove the bowl from over the pan and gradually add the butter, 1 small piece at a time, and whisk until all of the butter is incorporated. Add the salt, lemon juice, and cayenne pepper.

  1. This looks a lot like the Country Eggs Benedict they served at a buffet near Disney World – which I have scoured the internet for because it’s so amazing! What BBQ did you use for the chicken? I’m assuming you have your own top secret recipe so is there any store brand you would recommend?
