Masala Coconut Potatoes

If I’ve heard it once, I’ve heard it a fafrillion times.  You people are totally stumped by the concept of a side dish.  Yep, every time.  You’re all “ooh so like, a bag of salad. with ranch?”

Yes sure.  That works. Aren’t you bored, though?

Don’t get me wrong, ranch goes on just about everything, but does that feel good for you?  Does it feel fresh and light while simultaneously being comforting and fulfilling?  Cause to me, that feels like sadlad with ranch. (aka, empty hopes and dreams masked by joy.)

And while masking food with Ranch can take you to some pretty fun places (pizza and ranch, anyone? magicians created that combo.) it can leave you feeling worse for the wear on a weeknight.  You just busted your tail at the office all day, how bout a nice treat for dinner! Bag salad. (catch what I am hinting at?)

I’ll be clear. You deserve better.

Over at Daily Garnish, Emily focuses on healthy foods (mostly vegan) and while that’s a bit of a departure from Amuse Bouche, every blue moon, even I want to put the ranch dressing away.  This recipe is inspired on her take of the curried coconut potato.

Masala Coconut Potatoes

Ingredients:

Instructions:

Peel and dice potatoes into bite size pieces.  Sauté in olive oil over medium high heat for 20 minutes.  Add the coconut milk.  Reduce heat to medium-low, bringing the liquid to a simmer. Add all spices, make sure it is well combined.  Simmer for another 15 minutes until potatoes are cooked through.  Add peas and cook for 2 minutes.

Simple and Easy, warm and light.  It’s possible to have a side dish that you’re worthy of.
