The Great Amuse Bouche Wedding Challenge 3 – Pommes Whit

Have you heard of a Pommes Anna? Essentially, it is a crap ton of carbs layered and cooked in a crap ton of butter, all layered and gorgeouslike.

Well, how about something a little more delicate for our wedding.  You know that sister needs a good cheese/carb option at the cocktail hour.  I mean, people are drinking here!  You gotta soak it up, keep them going for the long haul.  If I serve them veggie burgers all night, they are going to be ess canned.  (think on it…)

So, in order to keep things classy and still carbafied – let’s visit Pommes Whit. Goat Cheese, Potatoes, Butter. Stacked as high as a miniature potato high rise.

Why, do I not live in a potato high rise?

Pommes Whit

1 lb fingerling potatoes
2 tablespoons melted butter
2 ounces goat cheese
salt and pepper
herb of choice for garnish, here we have thyme

Take your rinsed fingerling potatoes, and slice very thinly. You can use a mandolin if you have one.  Using a muffin tin stack the layers of potato and goat cheese, making sure each potato layer is brushed with the melted butter. lightly salt and pepper between layers.

Bake at 350 for 10 minutes, garnish with fresh herbs, and carb away.

This recipe makes about 12 Pommes Whit.

Is this carb dish classy enough for the wedding? You tell me!

Love,

Whit
